Mr Lee has been selling wanton mee for over 30 years. He was very meticulous in cooking the egg noodles, alternately blanching and rinsing the noodles with hot and cold water to rid it of alkaline (lye water) taste.
This stall has a big sign pasted infront of the over which says ?bu jian tian char siew? (不见天叉烧), which means the part of the char siew which does not see the sky.
I initially thought it meant the pork was cooked in the oven, hence never see any light! (LOL, I was too creative). ?Bu jian tian char siew? simply means pig?s armpit in a more polite way.
I was having lunch with Derrick at Tiong Bahru Food Centre, trying out some of the nice food in the hawker centre.
After buying Koh Brother Pig Organs Soup, I was surfing the net and saw Leslie?s post on Zhong Yu Yuan Wei Wanton Noodle (忠于原味云吞面). I decided to queue for it!
Recommended for you 👍 One of my favourite char siew in Singapore. One of my favourite blend of wanton mee sauce and nice tender-firm crunchy egg noodles. Combined together, it is a wanton mee hard to beat in Singapore.
A Must-Try when you are in Tiong Bahru or if you are a wanton mee fan.

A bowl of piping hot porridge is a comforting treat to me & it would probably be one of those last few dishes that I would even thought of queuing up because porridge is just porridge right?
Probably for most patrons, at least for myself, it is a very simple dish that can hardly be seen as filling to the stomach but it has its own beauty for being so satisfying to our palate.
If you were to look up the internet for night dining spots in the east pertaining to hawker food, you might be surprised by one such amazing stall - Chai Chee Pork Porridge - that offers this sole dish on its menu. Having quite a number of friends who live in the east region, my sources have been verified with them that this is the stall that I should set my eyes on. Just how often do you find such an extraordinaire where folks from different regions would travel down for it!
Known for its impressive queue & waiting time, getting a bowl of this goodness would definitely requires some patience. A norm of approximately 20-30 mins during dinner hours is the expected waiting time that I have been mentally prepared of. To satisfy the overwhelming demand, they have opened 2 separate stalls within the same food centre where one of them operates in the day (the stall on the inside) and the other operates at night (the stall on the outside).
Not only are the prices being affordable, there are many different combinations of ingredients to choose from which is truly a paradise for porridge lover.
As the signboard of Chai Chee Pork Porridge suggests, be sure to go for their specialty which is none other than its signature bowl of pork porridge.
You can even opt for a mix and match of ingredients such as Pork & Century Egg Porridge like I do which is priced separately.

Old Margaret Drive Chicken Rice, Now With Michelin Bib Gourmand.
Margaret Drive?s Queenstown Library was where I used to borrow books (maybe this will reveal my age).
The joy continued with a meal at the food centre opposite, and the staples would usually include popiah, pan-fried dumplings, and yes, Sin Kee Chicken Rice.
Sin Kee is a well-known name among chicken rice stalls in Singapore, mainly serving poached chicken rice Cantonese-style. It garnered more attention when it earned the distinction Bib Gourmand awarded by Michelin Guide in 2018.
Founded in 1971 as a hawker stall at the now-defunct Margaret Drive Food Centre, it is a family business owned by a certain Mr. Leong. His 2 sons, Niven and Benson, took over after he passed away in 2008.
Niven sold his late father?s famous chicken recipe, and now operates his own Uncle Chicken Rice at the Alexandra Village Food Centre.
Meanwhile, Benson continued operating Sin Kee, which moved to Mei Ling Food Centre, until 2015.
A year later, he and business partner Edwin Goh re-opened Sin Kee at Holland Drive where it is currently located, tucked at the corner of Chang Chen Mee Wah Coffee Shop
Sin Kee?s chicken are poached in a flavourful stock using chicken bones and other seasonings, to produce chicken that?s tender, smooth-skinned, succulent, and evenly cooked through.
An interesting method is that the chicken is plunged in icy water to ?shock? the poultry. This cooking method results in a meat that is ?crunchier? and in a skin that is smoother.
It also creates the gelatinous film just beneath the skin which many find delectable.
Note: As per Sin Kee?s tradition, there is no soup served along with Chicken Rice. The flavourful chicken broth went into the poaching of chicken and cooking of the rice.
Others may argue the chicken is good on its own, but for those who need more flavour in their dish, Sin Kee serves condiments on the side: soy sauce, chili sauce, and its Cantonese-style ginger dip ? which makes the chicken meat refreshingly better.
The ginger dip uses both young and old ginger, house-made grated and prepared watery with a gentle spiciness.
The chilli sauce, made with lime and vinegar, is sharp, tangy, and spicy.
Come as early as you can as many dishes are gone by late noon. Plan ahead as the stall is closed every Monday.
After so many years, the authentic flavour of their Cantonese-style chicken has remained almost the same, attracting both loyal patrons and foodies exploring that time-tested taste.

A Glorious Plate of Old School Kway Chap
One of the dishes that I learnt to eat while staying with my grandfather is Kway Chap. Many of my peers wouldn?t even go near a kway chap stall, but to me, this is a delicacy. After learning how to appreciate it, I often crave for a bowl of kway chap.
Mr Ng, the owner, has been running the stall for two decades and he spends a lot of time cleaning and preparing the offals.

The pig innards are, needless to say, the highlight. Look at the shimmering pig?s skin. It?s soft and slippery, and we polished off a whole plate of it.
We also had a plate full of intestines that are well-braised, odourless, and slightly chewy.
Because we just finished an intense workout, each of us ordered 2 bowls of silky smooth rice sheets soaked in a slightly herbal broth. Don?t forget to dip the intestines in the bright orange chilli sauce which is spicy and sour.

Dynasty Fried Porridge

Dynasty Fried Porridge proved me wrong. This quaint stall is located along Foch Road (which is near Lavender) and is an authentic Ipoh zi char restaurant that?s been around since 2015.
Dynasty Fried Porridge was opened by a Malaysian couple in Dec 2015. They left their hometown, Ipoh, to set up their first stall at MacPherson. Then, they shifted to Lavender, and then to Bugis, before finally arriving at Foch Road.
Fun fact: the concept of fried porridge came from Malaysia and originated because families were trying to find a way to make the best out of leftover porridge.
They decided to ?fry? porridge in a pan, just like they would with rice or noodles, and see how it turned out.
What Dynasty Fried Porridge serves is really unique and authentic.
I?ve never heard of fried porridge prior to this, but one visit to this cozy zi char place made me an instant fan of this comforting dish.
Plus, it serves other yummy zi char dishes that would please both Singaporeans and Malaysians alike, which is a huge plus.

Bak Chor Mee With 100-Year-Old Braised Pork Recipe In ABC Brickworks
Jerry and Fiona are a young couple who started Chun Seng Noodle House in ABC Brickworks Market last year, selling bak chor mee with a 100-year-old recipe for lor bak (braised pork).
Their version of this braised meat is adapted from a recipe handed down through Fiona?s grandma. Another arm of her family runs a Teochew porridge shop known for its lor bak ─ braising is truly in the family.
The entrepreneurial parents of two young kids took a leap of faith when Fiona signed them up for an incubation programme for aspiring hawkers.
Although they didn?t have formal culinary training, the couple has put their hearts and souls into running Chun Seng Noodle House.
I came for the lor bak, but I stayed for the noodles. I enjoy a bowl of well-made noodles, and Chun Seng Noodle House certainly gave me that.
It?s easy to see why the amiable couple and their reasonably-priced menu, with braised pork belly and braised chicken feet, have gained popularity with the old folk in the estate.
Queenstown, the nearest MRT station, is a 20-minute walk away. Right across the road from ABC Brickworks Market is Geometry, which you could consider hopping over to for dessert.
Otherwise, you might also try Ramen Keisuke Niku King for ramen that?s also topped with lots of meat!

He used to peddle his trade at MacPherson?s back alley before settling down in East Coast Lagoon Food Village. We ordered a piping hot bowl of bak kut teh ($6) that comes with 3 pieces of pork ribs in a cloudy white spice infused soup.
The meat is tender but has a mild chew to it. It is not the fall off the bone type but it separates easily from the bone.
I find the soup a little greasy for my liking, however the peppery flavour is quite prominent.
It is now run by the second generation Mr Han?s son who used to be an engineer. He now engineers bak kut teh with a peppery base and is awarded Top 10 Bak Kut Teh in the City Hawker Food Hunt 2011.
Enjoy some herbal and peppery style Bak kut Teh for a change today.

This is one of the Kway Chap not found in a hawker centre, and there are online reviews calling this the ?atas Kway Chap?.
If you stay around MacPherson, then Quan Lai Kway Chap 泉来粿汁 or Chuan Lai Guo Zhi Wang should be a familiar name, being a supper favourite for many.
The stall located within ?Sin Fong Restaurant? is opened till wee hours of 3am. (There is another popular Crab Wanton Noodles stall in this same coffeeshop.)
Quan Lai?s Kway Chap has been around for more than 50 years.
My recollection is that it was much more famous in the past, but perhaps fell slightly out of the radar due to the price point and inconsistencies.
No gamely smell for their pig organ.

One of the Oldest Coffee Shops With Great Kopi & Kaya Toast!
The best way to explore Singapore and understand our culture is to visit our hawker centres and kopitiams. That is where I would bring my tourists to when I conduct food tours because they serve uniquely Singaporean coffee and really cheap comfort food.
There are not many old school coffeeshops left. The more popular ones include Heap Seng Leong and Tong Ah Eating House.
Sadly, Chin Mee Chin Confectionery along East Coast Road has already closed down for good.
There is another old school coffee shop that I frequent too. And that is Keng Wah Sung (琼华昌).
This is one of the oldest coffee shops in Singapore and has been family-run for more than 70 years. It?s a real blast from the past, with the original signboard and weathered tables. You?ll even spot regulars enjoying hot cups of kopi or teh and chatting away.
I often bring my tourists to this coffee shop to experience the old school charm.
The kopi uncle is always welcoming, allowing us to take photos and even talking to us when he is free.
If you?re looking for a reasonably-priced and traditional local breakfast, this is the place for you. Oh, if you have space in your stomach, order a plate of wanton mee too!

Meng Kee at Taman Jurong Market & Food Centre serves quite a variety of claypot dishes all at a standard price of $5.
On its menu are braised pig trotters, braised meat (pork), sesame chicken, bak kut teh, pig's liver and ginger & spring onion batang sliced fish. They also do curries like curry chicken, curry spare ribs, curry mutton, curry sotong, curry fish and curry vegetables.
It is quite easy to overlook this stall as the stall front honestly does not seemed interesting enough to warrant another look and not to mention it being hidden in a inconspicuous corner of the food centre.
Despite being just a few units away from Ng Kee, I did not once throw it a glance that is, until I learn about their pig trotters which they are highly touted for from the hardwarezone community.
I guess it is to suit the palette of the elderly population here who may not like their food too heavy on flavors.

A friend told me that her current fave is a stall that has been around for a while but has recently just moved to new premises at the newly renovated tekka place.

Char kway teow also known as fried kway teow is one of the most wanted dishes in singapore that you cannot past through.
You may be melted with the mixture of flat rice noodles and egg noodles which will be commonly stir fried with eggs cockles lap cheong chinese sausages bean sprouts and chinese chives. It was mildly spicy and comes with cockles fish cakes beansprouts and egg.

Popular Hokkien Mee At East Coast Road.
I ate more than 20 plates for the Hokkien Mee listicle, but this was the one plate that made me stood up, stop, and go ?wow?. Because it had a rather surprising taste.
Operated by Uncle Alex, this Hokkien Mee at 396 East Coast Road is still being prepared in the traditional charcoal fire.
However, Uncle Alex has passed on most of the cooking work to the next generation, and the taste may not be quite the same as before.
Also note that there is another ?Geylang Lor 29 Hokkien Mee better known as ?Swee Guan Hokkien Mee? which is operated by the brother.
Therefore, be prepared to wait, say up to 20 to 30 minutes as Uncle Alex takes his time to cook up a storm.
However, heard that standards won?t be as consistent if it is other people cooking it.
The smokiness is its unique factor, and a class of its own and very ?sexy?. You can even find those black bits throughout.
The noodles were perfectly wet, laden with robust flavours and complimented with ample amount of prawns and squid.

I?ve known Terence since the day he started his Xiao Di Fried Prawn Noodle stall in Serangoon North 6 years ago.
Being a hawker is not exactly the easiest job but this 28-year-old young hawker aspires to cook the best Hokkien Mee in Singapore.
He has carved his name as an up-and-coming hawker star who has been featured in many media and also participated in Singapore Day in Melbourne.
Xiao Di means ?young brother? in Chinese, but Terence has more than 10 years of cooking experience.
He was working at his friend?s stall frying Hokkien mee, carrot cake and oyster omelette before he decides to perfect his perfect his skills at various well-known fried prawn noodles stalls.
Coupled with trial and error recipes and cooking techniques picked up on the internet, he finally gained the confidence to start out on his own.
Terence strongly believes that cooking with passion will make a difference to the final dish. Therefore, he is very particular about the preparation time and choosing the right ingredients. His stock is prepared using prawns from Thailand, which have more roe for extra flavour.
One mouthful and you?ll close your eyes in a moment of divine enjoyment.
We have tried many popular stalls that serve hokkien mee in Singapore and I personally prefer Xiao Di Fried Hokkien Mee.
Wet and gooey, Xiao Di?s fried prawn noodle is stir-fried in rich stock gravy, topped with slices of cuttlefish, fresh prawns, crispy pork lard and slices of roast pork.
All these beautiful flavours are bound together with a thick and robust prawn stock well absorbed by the noodles.
You?ll be hit by a strong taste of ?wok hei?, which we particularly liked. The garlic and pork lard further accentuated the overall fragrance of the Hokkien Mee making it simply irresistible.
Squeeze a bit of lime and pair the noodles with Xiao Di?s specially made chilli sauce, you will be able to fully enjoy this delish plate of fried Hokkien mee.
